  • Gorgonzola pasta with spinach and walnuts

      Pasta with cheese sauce is my favorite entree indulgence, so this recipe was calling my name when I knew I had 1/4 pound of gorgonzola, walnuts, and spinach in my refrigerator. Changes: Instead of using spaghetti as called for, I used whole wheat penne, and it was perfect for coating with the cheese sauce. For the liquid, to make the sauce creamier, I used 2 % milk instead of pasta water. I cooked the baby spinach with the pasta for the final two minutes and poured/tossed the cheese & walnut sauce over the drained penne and spinach. With the modifications, my husband and I Loved this.
