      Perfect crumble cake with little tart bursts of redcurrants for a nice contrast. A keeper!

  • Parmigiana "light"

      It's a very hot day today, so I altered the method slightly and made it entirely on the gas barbecue outside this morning. It was delicious at room temperature this evening. I added a little balsamic vinegar to the tomato sauce to perk it up slightly, but otherwise followed the recipe. My husband, an ardent carnivore, really liked it and said it was perfect for the weather and that he wouldn't mind if I made it again.

      Delicious! Very easy to make and a lovely flavour combination, although for some reason my family thought the spice was ginger rather than cardamom ?????. I didn't make the sweetened cream to serve with it.

  • Peppers stuffed with olives and goat's cheese

      Yum! Really enjoyed this. Prepped it a few days ago when it wasn't quite as hot and reheated it on a gas barbecue today. Very tasty. My only issue was that my peppers lacked structural integrity after the first cook: the sides bowed out and lay completely flat. Made filling them tricky! I think standard peppers would be easier to stuff than romano peppers, or they should be stuffed whilst raw and then cooked for longer with the filling in them.
