  • Roasted tomato & white bean soup

      Excellent vegan (dairy-free) tomato soup with beans and fresh herbs. My substitutions: parsley for cilantro; commercial garlic paste instead of this book's recipe. Used canned Great Northern beans. Also, I added the herbs to the onion/garlic/tomato paste mixture rather than roasting them with the tomatoes.

      I made a less spicy version of this with a bit of Portuguese hot sauce instead of the habanero oil, but the dressing was great and it was a fun change on a salad. I will make again and try the dressing on a variety of different veg.

      Turned out better than I expected. The grilled corn was a nice addition. The lime's acidity balanced out the heat and added to the freshness.

      Loved this steamed fish with lemon & spices. I used orange roughy fillets; wrapped in parchment paper (because banana leaves are not available here).
