  • Orange cake with orange buttercream frosting [citrus simple syrup]

      My orange-loving daughter's 1st birthday cake. Baked cupcake 13min and cakes an additional 23 min. Cake used 2 whole mandarin oranges. Icing used the zest of 4 more. Decorated top with slices from those. We didn't really need the cupcake but made it to avoid throwing off recipe. The cake itself is good, mildly citrus flavored. The icing is very sweet and noticeably orangey. I had expected more of a cream cheese taste, but it's kind of a standard heavy buttercream. After refrigerating overnight and bringing it to room temp the next afternoon the cake seemed too dry despite the syrup brushing. The baby really loved it though.
