  • Roasted butternut squash salad with creamy tahini dressing

      While I'm not a huge fan of tahini, this was a delicious salad. The roasted onions and squash paired well with the garlicky, creamy tahini dressing. I served the dressed veg on top of the arugula rather than all mixed together. I would make this again.

      This makes a GIANT batch of beans & rice. Consider yourself warned. The flavor was really good, and because I used jalapeno instead of scotch bonnet, it wasn't too spicy.
