Gallina Canyon Ranch is located 16 miles off the Abiquiu highway and lies within the Rio Chamo wilderness in Northern New Mexico. The red and white sandstone cliffs that attracted Georgia O'Keefe to the area rise above my garden. Since 1986, I have been growing unusual produce for Santa Fe's best restaurants. All my crops are cared for and harvested by hand. A mountain spring feeds the gravity-flow drip-irrigation system. I hope that interest can be generated among home gardeners in the day-to-day usage of rare heirloom beans and chiles, many of which have superior culinary characteristics and agricultural adaptability. We small growers can help maintain these seeds of past generations if we can create a demand for them. My aim is to encourage well-known chefs to create dishes using these endangered varieties in order that they may become part of our everyday cuisine. I want to thank all the chefs for creating these special recipes for me.
