Notes about Recipes in this book

  • Cheeseburger hotdish

    • jenburkholder on January 16, 2026

Made this a couple times and it hits the spot for comfort food.

    • swiand on February 09, 2026

A tasty dish that just needs something to make it stand out. Fun for the family.

  • Gjetost mac & cheese

    • ethedens on December 20, 2023

This was pretty good. Easy to put together, though the ounce measurement for the cheddar was completely off. I felt like I tasted the gjetost more before the dish was baked, but I liked the crushed Ritz on top. A good mac, but not my favorite.

  • Cheesy potatoes

    • swiand on April 20, 2026

Made this for my teenage son and I for a guy's night in. On first bite he commented that the potatoes were amazing. I had wanted a recipe for something like "funeral" potatoes and this was a step up from that. Will make this from now on.

  • Braised roast beef sandwiches

    • ethedens on October 02, 2023

These are so good. Would definitely make again.

  • Swedish meatballs

    • katiesue28 on January 13, 2024

These were quite simple yet tender and delicious. We served them over egg noodles.

    • jenburkholder on February 08, 2026

Good but I would tweak. The uncooked onion in the meatballs never tenderized fully; I’d prefer grated. The sauce needed a bit more dimension so I added a splash of buttermilk.

    • courtney_58smcu on February 14, 2026

Added mushrooms and used frozen meatballs.

  • Bootlegger Jell-o shots

    • jenburkholder on November 23, 2024

Delicious! Just beware that there’s a typo - the recipe says 3 packets of gelatin is 3 oz, but it’s actually only 3/4 oz. Use three packets, not 12!

  • Apple cake

    • swiand on November 10, 2025

We likely undercooked our cake as it sunk after resting. Still I liked the crisp, caramelized top with the gooey bottom and the apples,

  • Apple candy bar salad

    • ethedens on October 02, 2023

I wasn't super crazy about this, but other people gave it rave reviews!

  • Orange poppy seed cake

    • jenburkholder on February 08, 2026

Not the best. Turned out unpleasantly dense and surprisingly dry. Edible but def not a repeat.

Publishers Text

In this debut cookbook, recipe developer and Minnesota native Maren Ellingboe King perfectly combines the nostalgia of traditional midwestern dishes and influences of her Scandinavian heritage with an emphasis on local, unprocessed ingredients. Ellingboe King celebrates the growing diversity of her home state with a modern take on traditional recipes by using fresh produce, more spice, and more heat, all while retaining the simplicity and approachability of her family’s recipes. Readers will find Apple Gjetost Grilled Cheese, Lefse Pinwheels, Caraway Roast Chicken, Venison with Lingonberries and Juniper, Cardamom Stone Fruit Cobbler, and, of course, several variations of the hotdish. At a time when so many of us are at home and cooking more than ever, Fresh Midwest is the perfect combination of comfort and inspiration with most recipes designed to be made in an hour or less.
