      This is a good amount of work and I'd recommend a good quick read thermometer to make the process easier, but the texture is fabulous.

  • Roasted squash with mole almendrado

      I made a bunch of substitutions for what I had on hand (yellow onion instead of white, crushed canned tomatoes instead of fresh plum, etc.). I completely botched the method. But this still tasted awesome and came together really fast (minus squash roasting time)!
