      I used basil instead of mint. This is easy and excellent!

  • Scallops with buttery brandy gratin

      Delicious. Did not have scallops in shell so baked them in a small ceramic dish that fitted snuggly. The butter, brandy and scallop juices mixed together to make this surprisingly saucey with a nice crunchy from the gratin. Very indulgent for what was essentially a 15 minute meal to make.

      This was a novel way to cook chicken and made for a yummy dinner. I used Rao’s vodka sauce and chicken tenders, served it with buttered ditalini and a salad. The house smelled great and it was an enjoyable dinner to cook.

      Made for a great Irish soda bread! The rosemary is subtle as promised. Next time I’d increase the dates by 25% for more sumptuous bites. Also would either freeze the dates before chopping or dredge them in flour to keep from sticking together while incorporating.
