  • Peanut coconut sauce

      Great peanut dipping sauce/dressing for any Thai style salad or summer rolls. Would be good for satay as well. Kids would probably eat any veggie that's topped with this sauce! You'll want to lick the spoon on this one. I bought this book for the fridge org tips not realizing there were recipes in it. Her meal prep ideas are great so I made several of her sauces to have on hand to eat with all the fresh veggies I prepped and stored.

      Author states she coats veggies with this sauce then roasts them. I had just made roasted brussels before I made this recipe so I used it as a dipping sauce for them. It was good, but not wow in that usage. Looking forward to using it in some veg/grain bowls this week and roasting some sweet potatoes with it. I might amp up the seasoning a bit next time I make. Good condiment to have on hand for quick prep. I bought this book for the fridge org tips not realizing there were recipes in it.       Made this to use in the Chickpea salad recipe in the book. I usually buy and use Vegenaise (not currently vegan but I don't like regular mayo). This was a good whole foods substitute and hits all the right notes. Has the consistency of Vegenaise which is a bit thinner then reg mayo. I bought this book for the fridge org tips not realizing there were recipes in it.   • Classic chickpea salad

      Made this using the mayo recipe from the book. As good a chickpea salad as I've ever had (I make chickpea salad every couple months, sometimes from a recipe sometimes just by feel). I like the extra veggies in here. I feel like it needed a bit more of the mayo than stated, which was fine since the mayo recipe makes more than called for here. It such a nice salad to keep in the fridge for sandwiches, wraps, or to turn a green salad into a meal.

      These were good! I didn’t have enough raisins and only had regular, also didn’t have enough craisins, but they worked great with what I had. I let Townes really go for it with the food processor and they held up well.
