      Like another commenter I used green beans instead of broccoli. I thought this was OK, but not in the best potato salad recipes I've ever made. I wanted more zing, like more lemon, mustard and/or cornichons.

  • Spiced chicken with spring vegetables, spinach and mint rice

      This was really delicious, and a great spring dish. The only downside is that there's a lot of last minute bringing things together and cooking the vegetables so might be hard to do a lot of prep in advance e.g. for a dinner party.

  • Miso & gochujang butter roast chicken

      Delicious and quite easy. Made half a recipe. Had to use red miso insstead of white because that was what I had on hand. Not spicy even though I used the full amount of gochujang and red pepper flakesand not too rich for us either, but I trimmed out all the fat off the thighs.

  • Crispy chicken thighs with charred broccoli, apricots and preserved lemon dressing

      I wasn't sure what to expect from this, I was worried the preserved lemons would make it too bitter and that I wouldn't like the grilled apricots, but I was wrong on both counts. The overall combination of flavours was unusual and delicious. I also liked the method for the chicken. My only criticism is that putting warm/hot elements on a bed of rocket means the rocket wilts quite quickly - baby spinach might be a better option next time. I also used less red onion and more broccoli, and would do this again.
