    Slow Roasted Salmon with Burst Tomatoes and Broccolini 10/8/24: loved this one sheet meal! I don’t like sweet fish preparations, so left the honey out of the marinade. Otherwise it was great as is. The extra dressing with green onions was a perfect punchy note atop the succulent salmon, and the sweet tomatoes were a lovely compliment. Served with a side of coconut rice. Would make again.

    10/9/24 Brown Butter Brussels Sprouts, Parsnips, and apples. Delicious fall recipe! The brown butter has center stage here and it was delightful. (Used salted Kerrygold and it was worth it) Very easy to put together and a wonderful earthy - sweet - crisp- roasty combo of flavors. My dressing didn’t emulsify while warm, so had to whisk again before tossing.
