Notes about this book

I like this book a lot! Not only does it have well-thought-out international vegan recipes, it's a treasure trove of useful recipes for just about every vegan substitute ingredient you might ever need, including egg replacements, meaty-tasting broths, mayonnaise, and dairy products from ricotta to mascarpone to sweetened condensed milk! Some of those are available commercially, but can be expensive, so knowing how to make these at home (and in bulk) can be a real money saver! And you can tweak the homemade versions to your heart's content to get the taste YOU like! (For example, if I make the vegan Worcestershire sauce I'll add some tamarind paste -- available at Indian and Latino stores -- as it's an ingredient in the original recipe.)
