Notes about Recipes in this book

  • Mango blueberry smoothie

    • crandall57 on January 01, 2025

According to My Fitness Pal this smoothie is 122 calories and 4 grams of protein. It’s a tasty smoothie, but I think I’d add more blueberries next time. I didn’t add the vanilla bean powder.

  • Warm apple pie porridge

    • skvalentine on March 06, 2025

This is excellent-- really flavorful and nourishing. Didn't need any sweetener, although I did add some milk to serve.

  • Sweet potato and black bean tacos

    • crandall57 on December 31, 2024

I used pre-roasted sweet potatoes, so they didn’t cook with the seasonings on them, but that difference didn’t stop the dish from being delicious. I added the potatoes to the pan with the spices and the black beans. I used Mexican oregano and black beans that I cooked in the Instant Pot. I will make this dish again.

Easy and delicious! We did add lime juice and pickled jalapenos to the chimichurri

  • Sweet potato burritos

    • Pandan on January 31, 2024

Made this with purple sweet potatoes in an air fryer. Came out too dry for my taste, so I improvised a blended sauce with roasted tomatoes, chipotles and garlic and mixed it with the sweet potatoes and beans. Tasted great this way.

  • Mango burrito bowl

    • Pandan on February 12, 2024

Just made the mango salsa (added some cucumber) and the black beans and swapped the brown rice for grilled zucchini and chicken for a lower carb version

  • Sourdough pancakes

    • skvalentine on May 02, 2026

These are pretty good. I love how sour they are. My kids enjoyed them with maple syrup. This is a great way to use up sourdough discard!
