      Perfect chocolate buttercream. Fluffy and stable. Not too sweet, not too rich. Less fussy than meringue-based; better texture than roux-based/ermine. The crème fraiche and browned butter create intriguing complexity. I did have to chill for 30 minutes after adding the browned butter and melted chocolate, as the mix was quite soupy. After this, it whipped up beautifully.
