      Great curtido - punchy, savory, and fresh. Served with the bean and cheese pupusas from the same book.

      These are very mild pickles. Not super salty or vinegary, so you can eat them as a side rather than an accent. I liked them.

      A simple but addictive accompaniment to richer, savory dishes. I first made this to go with the Sopa de Frijoles con Masitas, and the Chirimol was so good I kept snacking on it while waiting for the soup to finish. Simple but so so good.
