      This is a delightful recipe. I think kids would like it because of the mini meatballs, but it’s got enough depth of flavor for adults. I followed the recipe as written, except I used 1 pound ground pork instead of the meat mix, and it was perfect. The nutmeg adds a very nice flavor to the meatballs, which were tender and surprisingly tasty. I also used bronze cut bucatini. Probably not a weeknight dinner, but not terribly time consuming for a weekend.

      Beautiful crumb, tender and sturdy rounds. Delicious flavor with chocolate frosting. Recommend 8 inch pans for the appropriate height. Wrapped the pans with Cake Strips to prevent doming, and the cake came up to the top of the pan.

  • Invisible apple cake (Gâteau invisible)

      This was so delicious. I didn’t make the whipped cream bc my guest brought ice cream, but the cake and caramel sauce are dreamy. It gets very dark in the oven, so I put a piece of foil on top and took it out at about 70 minutes. I wouldn’t say the apples gave NO resistance to the skewer, but when cooled the texture was soft and perfect. IMO the cake alone would be a bit boring, but with the caramel sauce it sings!

  • Caramel sauce with allspice

      So good. The bourbon and spice gives it indescribable depth. Perfect accompaniment to the apple cake on the same page, but would also be good anywhere.
