Publishers Text

When Tom and Michaela Kitchin opened The Scran & Scallie in Edinburgh’s Stockbridge, their dream was to create a warm, welcoming pub rooted in Scotland’s traditions. What began as a family venture – with hard hats, renovations, and the imminent arrival of twins – quickly became a neighbourhood hub where locals and visitors gather to share good food and good company. This book tells the story of that journey while celebrating the philosophy that shaped it: “From Nature to Plate.” Guided by the seasons and inspired by Scotland’s rich larder, The Scran & Scallie has reimagined classic dishes such as Cullen Skink, Venison Wellington and Ham, Egg & Chips, while embracing new ideas that reflect the pub’s Scottish-Scandi heritage.
