A great book with very easy, accessible recipes. Not many photos. Rose was using things like ground chicken and turkey long before they were readily available in supermarkets. Each recipe comes with nutritional information. Cuts in calories have not compromised flavours. A couple of our fave dishes are: Cajun spiced fish with rotini, zucchini and tomatoes, Seafood Tomato Stew over Fusilli w Fennel, Pasta w Sauteed Chicken, SnowPeas and Oriental Dressing and Spaghettini w Minced Pork (I use chx or tofu and serve w rice or noodles) and Mushrooms in Black Bean Sauce.

Publishers Text

Proving that "light pasta'' is no oxymoron, the author of Rose Reisman Brings Home Light Cooking, etc., sets out pasta dishes that are both satisfying and low in fat. With 175 recipes covering soups, salads and pasta dishes with meat, with vegetables and with cheese, the collection is an excellent introduction to cooking pasta for the uninitiated and full of suggestions for those who want to eat healthfully and without fussy preparation. Each recipe contains a nutritional breakdown and cooking tips. Reisman lowers the fat content by reducing the amount of cheese used, by using 2% milk and by relying on cooking sprays and olive oils. Recipes run the gamut from the traditional Pasta with Ripe Tomato, Basil and Ricotta Cheese Sauce to Hoisin Beef, Red Peppers and Snow Peas over Fettuccine. Ingredients are easy to come by, and plenty of substitutions are included. For those who want to go to the next level, Reisman also provides recipes for homemade pasta.
