    This is a well structured and highly informative reference book. It identifies approximately 2000 ingredients by name and photograph, describes their composition and also uses. No recipes in this one but I find it an invaluable reference to sit alongside Stephanie Alexander's Kitchen Garden Companion and Ian Hemphill's Spice Notes.
