    Judith's Green Chile (pg. 54) - This is an excellent and fast way to make green chile to smother burritos or enchiladas. I used roasted and chopped green chiles for this recipe based on my instincts and was very happy with the results. I believe if you started from fresh green chiles it would not have the consistency you would want.

    Original Taos salsa (pg. 56) - a cooked onion, green chilies, garlic powder, and tomatoes salsa that is an excellent match for nachos for a group. I don't think of it as a general purpose salsa.
