  • Clean-Eating muesli

      This is so good, every time I make it I end up eating the entire recipe at one sitting! I make it with yogurt, frozen fruit, and slivered almonds instead of walnuts. I have to say it looks NOTHING like the photo in the book. Once you put in the cinnamon it looks like a brown mess. But don't worry about that -- it is healthy, fast to make and delicious!!

      This soup was very tasty and a great way to use up leftover spinach. I used Japanese dashi for my stock and carrot instead of edamame. Having to strain it into another pot makes the cleanup a bit more work than with other miso soups I have made.

  • Maui black bean soup

      The title of this soup can be misleading, because the recipe has nothing to do with anything Hawaiian as far as I know. However, the soup was delicious, especially with the frozen roasted corn I put in (from Trader Joe's). I didn't bother to puree it.

  • Couscous salad Greek style

      This was a very good summer recipe featuring fresh tomatoes and with no real cooking involved. I used green pepper instead of cucumber (which I dislike). However, I did not serve it "poolside." In fact I think I just stood in the kitchen and ate it out of the pan.

  • High-fiber bean dip

      In my opinion this bean dip is too dry unless you add considerably more oil than the recipe calls for. It got a lot better after I put some chipotle hot sauce in it.

  • Farmstand tomato salad

      Can add feta or goat cheese for a main dish salad.

  • Sesame-roasted broccoli and green beans

      Or use hoisin sauce instead of oyster sauce.

  • Molasses bread pudding

      If you are not a molasses FREAK like me (I like part blackstrap), you might want to cut part of the molasses with a different liquid sweetener. The Ezekial bread gives a very good firm texture.

  • Pumpkin hummus

      Or try with mashed winter squash or sweet potato.
