    Sweet mushroom pickle (pg 68) has strong raisin (sweet), garlic, and ginger flavors along with the typical Indian spices (hing, red chili, mustard see, fenugreek seeds, and sesame seeds, vinegar, and jaggery). I used a coconut vinegar. This is an uncommon condiment to add to a South Asian dinner. They are rather addictive.
