Squaw corn (pg 170) is a version of corn pudding in a very basic form - onion, bacon, cream-style corn, and eggs. It comes together easily and provides a base for many variations - cheese, bell-peppers, chilis . . . but given my library, I'll continue to use a recipe that is a bit more complex for my base.

Notes about Recipes in this book

  • Red cabbage and apples

Rather good, especially the onions and apples, so add another of each. Made second time with one more apple and a shallot, still rather good.
