    Pear mincemeat (pg 50). I grew up with a Mother whose cooking was defined by rural, depression-era America - think apple mincement as meat scraps from butchering went into sausages. So I was fascinated with the idea of pear mincement. The recipe is very solid but the citrus is a bit strong for my taste.
