      I used 19cm square tin as recommended but it was too small and the mixture spilled over. Will try a bigger tin next time. It also browned too quickly but didn't cook through in the time stated so will reduce the temperature and cook for longer. Finished result was OK, the orange icing was great.

      Skipped the orange and adding apple pie spice mix to both the topping and cake but otherwise made as is. I gave it 5 mins less the recommended time but I could have given it a couple mins less still. It was super easy and tasty but next time I think I would add 2 apples (grate one and cube the other) as it was a tiny bit dry and add lemon zest to the batter and maybe some cardamom

      Really nice cake! I mixed it all in the food mixer; used large eggs and sprinkled demerara sugar on the top with the reserved walnuts. Even nicer the next day.

      Agree with other comments. Easy to make and works every time. Any old bananas I cant use up I chuck in the freezer and pull out later to make this

      Lovely easy recipe; very light fruit cake. Great for Easter. The icing part wasn’t quite accurate, I had to add more orange juice to the icing sugar to make it a bit more runny as per the book photo.

  • Bramley apple, fig and walnut flapjacks

      Easily converted to vegan flapjacks with dairy and egg free margarine in place of the butter. In rhubarb season I have swapped apples for cooked rhubarb and ginger (no added water) and in plum season for stewed plums
