    After acquiring my new ebelskiver pan, I couldn't wait to try out this cookbook. I went with the classic ebelskiver recipes because I'm a total newbie to the ebelskiver world. The recipe was easy to follow and fairly easy to make. Separating the eggs was probably the "trickiest" part. They came out tasty and delicious. Hubby has become quite a fan and now requests them nightly.

      I haven't tried this recipe yet, but looking at the ingredient list, it seems that the recipe yield is going to be much more than 21 ebelskivers.

      Halved the recipe which yielded 12, plenty for 2 people. I felt there was too much chocolate but Mr P thought they were just right, but then I'm not over keen on chocolate. What was good was the lovely melted pool of chocolate when you bit into them. The batter was lovely and light. Slightly fiddly to turn at first but you soon get the hang of it. Next time I'll reduce the chocolate chips by another 50% - i.e. 50gr.
