      Don't stop at just the chicken recipe. The key to this dish is serving the red pepper and shallot curry over the chicken and eating them both together.

      Nice combination of flavors with richness added from butter & lots of Parmesan. The indicated cooking time for vegetables was a little more than needed; the sweet potatoes basically became part of the sauce which didn't affect the flavor, but did affect texture, and muddied up the appearance. I threw in a leek for part of the red onion, and arugula for beet greens.

      Wasn't crazy about this...the seasoning was a little strong/sweet and the salmon dry even with the marinating time.

      This couldn't have been easier to make -- if I had realized just how simple it is, I would have tried it ages ago! My husband and I usually have milk on hand for recipes, but we're not big milk drinkers so a lot of it often goes to waste (which I hate!) I finally had the idea to use the extra to make ricotta before it went bad and it turned out great. I used 2% milk without any trouble, though I do think it yielded a bit less.
