I just grilled chicken, no vegetables, using metal skewers and a gas grill. I made the curry marinade with Jamaican curry powder and grapeseed oil. Marinated the chicken only 2 hours rather than 3. Grill may have been a bit low, as the chicken breast cubes needed an extra 1-2 minutes. The chicken turned out moist and super flavorful.
Our peaches were not the greatest but the ice cream was still delicious. I used cream but substituted non-fat milk for whole milk. It was rich enough for us.
Very good peach ice cream - some fresh peach flavor persists and contrasts really nicely with the creamy ice cream base. I cut the peaches in 1/2-inch chunks and found that to be a bit too big for me - they were also a bit icy in spots. I'll cut them smaller next time. I made a double batch peach & raspberry crisp. great topping. I used 1 Tablespoon of cornstarch for the filling. I would use 2 T next time for peaches.
