Easy to make, tasty and healthy. It's also easy to substitute other veggies for what ever you have available, ie Collards / Spring Greens for Kale, parsnips for carrots etc etc.

  • Tortilla soup

    • jay_jsgev4 on March 14, 2026

Great topped with avocado. Can add cheese & sour cream for a lacto-ovo take. We didn’t have corn tortillas so used tortillas chips and it worked great.

    • jay_jsgev4 on April 19, 2026

Made it with half the chili powder this time for a little less heat.
