Notes about Recipes in this book

  • Broccoli & red pepper stir-fry

    • happyeater on May 03, 2015

Too much sauce. The broccoli and red peppers will overcook if you wait for it to cook down. Also a little bitter. I even made the vegan worcestershire sauce (which I did like). Not the best stir-fry but I like that it's oil-free.

  • Tortuga rum cake

    • SugarFree_Vegan on February 08, 2014

I substitute the Sugar for Xylitol and stevia to make the cake even more healthy. It's a lovely recipe and keeps well (if allowed!) because of the rum content. I also make my own powdered Xylitol for icing/frosting by using a high speed blender and adding a pinch of cornflour/starch to the xylitol. It's not a bad subsitute although doesn't behave exactly like sugar when mixing with a liquid.

  • Simple cheese sauce

    • kpieczyn on June 07, 2015

This is great with salsa added to it.

  • Peanut butter-cup smoothie

    • nikasul on April 20, 2017

Good with almond butter instead of peanut butter

Reviews about this book

  • Oregonian

Her premise is that plant-based cooking doesn't have to be a chore, and that if home cooks creatively use ingredients they already have... they can come up with nutritious meals in 30 mins or less.

Publishers Text

After vegan chef Lindsay S. Nixon wrapped up her delicious-cookbook "The Happy Herbivore Cookbook" last year, she went back to her kitchen in her new home of St. Maarten. Island living encouraged her to come up with simpler recipes, which led her to create a follow-up cookbook with a focus on recipes that bring tasty back to quick-and-easy. Now, in Nixon's much-anticipated follow-up cookbook, "Everyday Happy Herbivore", readers will see, once again, that just because plant-based eating is optimal for health, that doesn't mean it has to be expensive or time-consuming. "Everyday Happy Herbivore" includes more than 175 doable recipes - recipes that are so quick and easy, you could cook three healthy meals from scratch every day. Each of Nixon's recipes is made with wholesome, easy-to-find, fresh ingredients and includes no added fats. With additional notes indicating recipes that are ideal for preparing ahead of time and those you can whip up with just a few-pounds, "Everyday Happy Herbivore" will be the must-have cookbook for anyone desiring a healthier, happier menu.
