  • Chicken with cauliflower and apples

      Very nice, easy to prepare all on one baking sheet. Added red peppers & carrots to the veggies--had to use boneless, skinless chicken thighs, & added a caramelized onion topping to make up for the lack of a crispy skin. Definitely will make again.

  • Roasted chicken and butternut soup

      I was surprised how many online recipes came up when I entered a search for chicken and butternut squash - I'm away from my cookbooks. Finally chose this one, as the weather is turning cold and we'd just lit a fire, so a hearty bowl of soup seemed just the thing. Very quick and easy. I prefer a smooth soup so blended the squash rather than just mashed it. I only had boneless thighs, any sort of chicken would do. I saw another similar recipe that had quinoa, so I cooked some separately and added it to the bowls when serving. Made a great meal - and teenage son announced he wanted more soups in future.

  • Light artichoke and mushroom lasagna

      This lasagna was very wet--I think it called for far too much sauce. The mushrooms had a nice flavor, but the artichokes were overpowered by the sauce. I used a homemade marinara. I won't be making this again.
