    Crostoni con uova e lenticchie (crostoni with egg and lentils) (pg 66) is a crostoni that must be eaten from a plate because of the poached egg. This is an excellent lunch dish - bread, lentils, veggies (carrot, celery, onion, mushrooms), and egg makes a well balanced dish. The lentils reheat well so one can easily spread the servings over multiple days, only poaching the eggs at the time of serving.
