    One of our fav crust recipes but requires time mgmt. mixed reg AP and ww flour. Made full recipe and cut it into thirds: 8” cast iron, 9” cake pan and froze last one

    My first time making pan pizza. Came out pretty good, I just have to experiment a bit more with the resting time and how to get a crispier bottom. I let the dough rest for 4 hours while it was quite hot and then put it in the fridge. Maybe that was a bit too long. Calculated the recipe for two 12 inch sized Lloyd pizza pans and baked it for 12 minutes in my pizza oven at 290 degrees Celsius. Topped it with ready made pizza sauce, mozzarella, beef salami and pickled jalapenos. One pizza was enough for two adults and a toddler. Also tasted good cold the next day.

    This pizza is really about the dough & cooking method. I cut the dough in 1/2 for one 10" cast iron pizza. The 1st rise went for 9 hours (but could go for up to 24 in cooler weather). I was a little worried about the texture of the dough at this point but shouldn't have been. In addition to the sauce (not his) & cheese, we topped it with cooked sausage, red onion & chopped hot peppers. My oven does not go to 550 but even at 500, with the pan placed on the heated pizza stone it cooked beautifully. I did give it maybe 2 minutes on the element (as instructed) to be sure the crust was crispy. Finished with a generous sprinkle of fresh basil, this was really delicious.
