    Made this on a weeknight. It's do-able if you don't mind eating at 9pm. Well worth the work, the sauce needed to be thinned quite a bit but is absolutly delicious. Rice filling is fantastic.

    A little bit of a project, but well worth it. Recipe makes nearly twice as much rice as you will need to stuff the peppers. I will reduce this next time, because it doesn't make sense to me to serve extra rice alongside the rice-stuffed peppers, as suggested. If you want the sauce to be saucy, it will need to be thinned a lot. Mine was pasty even with an extra 1/3 cup or so of water, but this worked fine and the results were completely delicious.
