Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

    Another reviewer gave this recipe 3 stars, but I give it 5. It's a delicious preparation for zucchini. My zucchini were small and farm fresh - perhaps that makes a different. I gave them plenty of time to sweat out their moisture, browned them hard, and subbed dry mint for fresh, which was fine. I loved them tossed with pasta, and leftovers eaten cold smushed onto a cracker.

    Flavors were good but I found this dish to be too oily for my taste.
