    Can substitute chicken stock for half of the heavy cream.

    (On page 26) Amazing soup! Added more nutmeg and shallots than called for. Butter too. Added sweet wine at the end - 3/4 cup. Used regular black pepper, not white. Used 4 different varieties of mushrooms. Put chives in soup. Even with all these alterations, it turned out amazing. Made tuna & noodles with leftover soup. Egg noodles. Yummo.
