Can substitute the book's "Homemade corn tortillas" recipe for store-bought corn tortillas; canned black beans for the book's "Simple beans from the pot," crème fraîche or sour cream for crema Mexicana; cotija cheese, farmer cheese or feta cheese for queso fresco; and serrano chiles for jalapeño chiles.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

These look disgusting but are quite tasty. They're also very quick (minus cooking the black beans). My black bean puree came out a bit thick so I'd probably add more liquid in the future. This definitely needs some sort of salsa served with it. The crema mexicana can probably be safely omitted.
