    Really liked this light tasting potato salad. A bit lighter version of German potato salad without bacon, bacon grease, etc. This one uses chicken broth to cook the potatoes and liked the idea of mashing small amount of potatoes to make a slurry. The amount of vinegar, mustard, and sugar was just right. I had two stalks of asparagus I wanted to use up and sliced them diagonally, parboil very quickly and added to the salad. Served this with leftover rib eye roast with au jus and horseradish sauce along with fresh corn on the cob. Gruner veltliner completes it.
