Recipe calls for the use of a pressure cooker. Beans must be pre-soaked. Can substitute kidney beans for borlotti beans, other mushrooms for crimini mushrooms, tarragon for savory, other salty black olives for Niçoise olives, French or Italian dried herb blend for fresh herbs, and regular lemons for Meyer lemons.
