    Served as a palate cleanser between dinner party courses. Visually this sorbet is stunning, almost fuchsia, because of the coloration from the dried hibiscus (which is strained and not in the final dish). Very flavorful, but think it would be better as a dessert with something like biscotti, or with fresh berries over it and a bit of Prosecco. It just seemed a bit heavier than other palate cleansing sorbets I've served (lemon-rosemary with Campari, or grapefruit-tarragon with Campari) or maybe I"m just accustomed to a bitter accent from the Campari and was missing that. Still, it has great eye appeal and flavor.
