Scandi salmon burgers with dill and tomato sauce from A Change of Appetite: Where Healthy Meets Delicious by Diana Henry

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Burger was fragile but held together enough to transfer from grill to plate. The taste was good, a nice foil for the wider meal. The dill yoghurt sauce was delicious even with bland supermarket tomatoes, one to repeat for sure.

Excellent patties - I was surprised by how well they held together. Baked for around 6 minutes at 400 F, as broiler wasn’t working. Went really nicely with the sauce, cucumber, and Estonian bread.

Finely chopped salmon bound only with a little yogurt and mayonnaise made a fragile burger but among the best I've had. I omitted the cooked onion (and butter) and added spring onions for extra flavour. The accompanying sauce was the perfect complement. I served these on the black bread.
