Garlic chickpeas with cumin-fried fish from Off the Shelf: Cooking from the Pantry (page 80) by Donna Hay

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Another easy recipe for dinner. I had to change a couple of things starting with the chickpeas. I didn't have any leeks, so I used an onion instead. It didn't really matter. They were delicious. I followed the instructions to cook the fish but it was a disaster that thankfully I was able to rectify. The author says to put some oil, butter, ground cumin and a chopped red chilli in a frypan and cook it for 3 minutes before adding the fish fillets...... well, the whole mixture turned totally black..... I had to throw it away!! Instead, I decided to sprinkle the fillets with cumin and Aleppo chilli flakes and fry it with some oil and butter. That worked well and turned out into a very tasty fish fillet. We had some leftover chard from the previous night, and that helped with a bit of greens on the side. Lovely mid-week meal.

The fish was good - we both liked it - but the chickpeas were great. Made a half batch for the two of us, and added the leftover half cup of chickpeas to a salad the next day. Forgot to get a red chili, so added a few shakes of chili flakes.

Pg. 80. Loved everything about this dish. The various flavors, the textures, the easy prep and execution. Deserves several revisits!

    p. 80 - Made this in Jan '03. Awesome. . . especially the chickpeas. I used onion vs the leek called for and would double the fish spice next time and use a smaller pan so the spice is deep enough to get a coating on the fish similar to that in the book. Still . . . just wonderful. Quick and easy.
