Fish sauce roast chicken from Asian After Work: Simple Food for Every Day by Adam Liaw

  • whole chicken
  • fish sauce
  • red onions
  • whole plant coriander
  • bird's eye chiles

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Notes about this recipe

Very flavorful and moist. My store bought cilantro did not come with roots, so I skipped that and I have no bird’s eye chiles in the house, so substituted one medium size jalapeño. Will definitely make this again

I was a bit dubious based on the title, but I had a bunch of coriander that needed using up and I saw this recipe while flicking through the book, boy am I glad I tried it!! Very moist as previous reviews have said and somehow the skin is shatteringly crisp. I accidentally used brown sugar instead of caster and would repeat that happy mistake. It’s a bit of a stretch for an after work dinner but not out of reach. A make again dish for sure.

This is another go to roast chicken recipe which I highly recommend as it produces a moist and tasty result. It is very easy and quick for a roast chicken as you take out the backbone. This is now on regular rotation at our house.

Sounds gross, but the end result wasn't too fishy or too salty... instead, this produced the most tender roast chicken I've ever had!
