Garlic-scented tomato salad from Essentials of Classic Italian Cooking (page 548) by Marcella Hazan

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

A recipe for garlic lovers! I haven't made it with peeled whole tomatoes, but it was delicious with halved grape tomatoes. We used the garlic soaking trick for a quick vinaigrette for a green salad and it was equally awesome! A nice addition to the salad arsenal.

For the garlic lovers - check yourself! A delightfully easy and garlicky side. I did not go through the hassle of peeling my tomatoes though I chopped them and let them drain for a few minutes. I also thought that the garlic should go to more use besides just “scenting” the vinegar for 20 min and so left a few bits in. Wow that packed a punch. By the time lunch rolled around the garlic flavor and aromas were STRONG. We bread for dipping as recommended, which reminded me of that perfect pan con tomate you get in Spain. Served alongside burrata and prosciutto for a perfectly tasty lunch

Very simple, very good. Would probably work as well with parsley instead of basil.
