Masala omelette (Masala amlet) from Made in India, Cooked in Britain: Recipes from an Indian Family Kitchen (page 148) by Meera Sodha

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Tasty! Halved the recipe. My husband and I agreed it needed some kind of sauce. Used a shishito pepper sauce he had made up previously in the fridge. A chutney would also be good! Served alongside toast.

The kind of omelet I can eat any time of day.

Made 6/20/20 and 4/2025 - the flavor is really good and I found it easy to halve.

Nothing earth-shattering here, but this does make a pretty tasty omelette! We halved the recipe for two people and each had half the omelette on a sandwich bun, with butter and sriracha. I'm normally not a ketchup fan, but I do think ketchup would be good here, as Sodha recommends in the headnote.
