Can substitute Thai white rice flour for white rice flour.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Meh. Not up to Medrich's standards, Her headnote says that these muffins are short and sturdy. I say that they are squat and dry. The last few were thrown out. I won't make these again.

These were ok. I found them to be too sweet for my taste. They took a little longer to cook than stated, and even then some muffins were undercooked, but that says more about hot and cool spots in my oven than the recipe.
