    We made this for our meatless Monday dinner, and it was perfect. I liked it better than expected. the soup is well seasoned and we did top it with the green onions and chopped tomato. We served it with pita, as recommended. Additional note - this soup is great for leftovers because the flavors are even better the next day! I’d honestly rate it 3.5 out of 5.

    Creamy, low fat, & satisfying, but needs a little boost of flavor. I didn't have fennel, unfortunately, which might have helped, but did use some coriander instead. More cumin might also do the trick.
