    Everything in this book is simple, hence the name, but this recipe was the most simple yet. Finding the ingredients was the hardest part. We never did find the lime leaves and had to sub baby ginger for galangal. It was still delicious. The entire soup probably takes ten minutes to make. I tried to serve it as a standalone supper but it would be better with a carb such as a side of rice.
