Can substitute granulated sugar for palm sugar. See the book's recipe for "red curry paste" ingredients.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

This was excellent. I am trying to cut back on coconut because of the saturated fat, and this "dry" curry gave me the things I love about curry without the coconut. I got the dregs from the fish counter so my fish was very thin. Pan frying it was more or less deep frying it. I didn't cook the basil; I added it in at the end. Served on top of barley.

This is excellent! The catfish has great flavor. The other ingredients seasoned the fish, but didn't create much sauce. I substituted jalapeno chiles for Thai chiles (for less heat).
